We’re known for our bangin’ breakfasts. From a slap up Full English, to delicious Peaches & Cream – we’ve been getting Manchester ready for the day for the past 10 years. We asked super chef Liam about his fave brunch…

Favourite Trof brunch and why?

Chorizo hash has to be the one for me – such a great breakfast item! I like a bit of spice in the morning. The red onions are cooked in the oil from the chorizo, and we finish it off with some chillies so that gives it a proper kick and lovely colour. Really nice and floral too, from the rosemary.

Fave guilty/drunk food pleasure?

I don’t know about the food – but drink wise I’d probably say a French Martini. I f*cking love a French Martini…

Best part about being a chef?

Honestly, I don’t know how to say this without sounding cheesy! The best part is when I make a special, and people try it and enjoy it – whether it’s for work or not! Really makes me happy.

If you had to choose another career…

Tough one… maybe I’d say an actor though? I did drama in high school and I always enjoyed it… like pretending to be someone else. Second option: bodybuilder haha.

Best thing about Trof?

The stairs to the toilets… everyday is leg day.
